Machine Shed Restaurant Shares their Holiday Pie Recipe
The Minnesota Machine Shed is featuring Cindy's Holiday Cream Pie during the month of December. "Pies are extremely popular around the holidays and this recipe is sure to be a favorite among our guests," says Chef Phil Gustafson. Guests can order Cindy's Holiday Cream Pie by the slice or purchase an entire pie from the Machine Shed to take home or give as a gift. Chef Phil says, "Because we continuously receive requests for our feature pie, I have included the recipe below for those who would like to bring a taste of the Machine Shed home to their holiday table."
Cindy's Holiday Cream Pie
1. Combine to make pie crust:
8 egg whites whipped until stiff
½ tsp. salt
¼ tsp. vanilla
1 ¼ cups sugar added gradually
12 crushed Ritz crackers
2. Work pie mixture into a pie tin and bake for 30 minutes at 350 degrees. Let cool completely.
3. Combine to make filling:
12 oz. cream cheese
2/3 cup powdered sugar
½ tsp. red food coloring
5. Layer top of pie with:
1) 1 cup well drained, crushed pineapple
2) 6 oz. whipped topping
3) 1/8 cup pecan pieces
